chore: Upgrade stackable-operator to 0.110.1

Part of stackabletech/issues#844

Bump stackable-operator to 0.110.1 and snafu to 0.9:

• Replaced the untyped HashMap<String, HashMap<String, String>> config overrides with a typed HdfsConfigOverrides struct that only accepts hdfs-site.xml, core-site.xml, hadoop-policy.xml, ssl-server.xml, ssl-client.xml and security.properties.
