docs(python): Update Tracing pages for new stream mode

This PR updates pages under Tracing with information about the new stream mode and the new Span APIs.

Note:

• this branch does not contain the updated pages under Tracing > Instrumentation > Custom Instrumentation > X (eg instrumenting mcp servers). I didn't get to them yet (maybe I should create a new branch)
• PR is quite big (a lot of code examples updates). I could still break it up into multiple PRs if that helps, but it obviously wouldn't reduce the number of changes to review 😅

Important

Broken links: I added links to the New Spans guide on these pages, but since this guide does not exist in this branch, we get a linting error.
Should only be merged after #18456
