Add changelog page with May 11, 2026 update

Summary

• Adds a new Changelog page at /docs/changelog using Mintlify's <Update> component.
• Adds the first changelog entry for the week of May 11, 2026, covering user-facing work shipped to e2b-dev/infra and e2b-dev/E2B.
• Adds the page to the Getting started navigation group in docs.json.

Entry highlights

• New features — snapshot compression, custom domain header transforms, stable per-sandbox hostname routing, HTTP/2 in the Python and JavaScript SDKs.
• Updates — pause/resume performance, lower connect latency under contention, smaller snapshot diffs (zero/discard detection, ext4 inline data, disabling proactive guest memory compaction), opt-in pre-pause reclaim, free-page reporting, controllable kernel version for new template builds.
• Bug fixes — SDK connectivity over IP hosts, dropped command output on subscriber disconnect, crash on client disconnect during streaming, post-resume reads on compressed snapshots, leaked sandbox VMs, snapshot-upload race, NBD trim/sync writes.

Only end-user-visible changes are included. Internal refactors, tests, CI, and toolchain pins were excluded.
