When they release it to their apt repo, our systems will pickup the release.

What is different for these images, do they use different sources?

I'm going to assume they manually change the version in the dockerfile to update. We try to have ours automated as much as possible but also, the delay isn't the worst thing for unifi as they do have history of pulling broken releases.
