feat: update LLM Gateway to 182 models

- Uses extends to reference canonical providers where
  possible (116 models), keeping 66 full definitions
- Only includes active text/chat models
- Adds new models: Claude Opus 4.7, Grok 4 Fast,
  Kimi K2, Mimo V2, GLM 5.1, Qwen 3 Coder, and more
